Family Favorite Recipe- Apricot Chicken

Apricot Chicken

Chicken (a few breasts? I just eyeball it) cut into strips
cubes of grated carrots and/or spinach

Wet Mix:
2 eggs
2 tsp. soy sauce
2 Tbs. water

Dry Mix:
1 cup seasoned bread crumbs
1/2 tsp. garlic powder

Apricot Sauce:
1/2-1 jar apricot jam
2 tsp. soy sauce
1 clove chopped garlic
1/4-1/2 cup water

Cut the chicken into strips or pieces. Dip chicken into the wet mix and then coat in the dry mix. Fry in oil until golden brown. Turn chicken pieces frequently. Add carrot and spinach cubes. Pour Apricot Sauce over the top. Turn down stove heat to low-medium. Cover and cook until chicken is cooked through.

Serve with rice and peas & corn.
