8 oz penne
1 bunch of broccoli, cut into florets
1 lb. Italian turkey sausage
2 chopped garlic cloves
1/4 c. oil packed sun-dred tomatoes, drained and chopped
1 T olive oil
2 T lemon juice
1/2 t salt
1/4 t pepper
fresh grated Parmesan cheese (lots!)
1. Cook pasta. When 3 min remain of the pasta’s cooking time, add broccoli to the pot. Return to boil and cook until crisp tender, about 3 minutes. Drain
2. Meanwhile, made the sauce: Cook sausages in a large nonstick skillet over medium heat until cooked through (8-10 min). Slick into 1/4 in. slices and cook over medium-high heat until browned on each side. Remove from skillet.
3. Using the same skillet, cook garlic and tomatoes in olive oil over medium heat until fragrant, 1 min. Stir in lemon juice and cook, stirring 2 min. Add pasta, broccoli, and sausage. Toss to coat. Stir in salt and pepper and serve with generous amount of Parmesan cheese.
