Affectionately referred to as: Colon Blow Muffins

A healthy snack or breakfast recipe that can be pre-made and frozen.

Colon Blow Muffins
from my friend Bethany, who is always WAY healthier than me

Combine in a bowl:
2 1/4 c. oat bran
1 T. baking powder
handful of raisins

Blend to puree:
1 1/4 c. nonfat milk
2 egg whites
2 large over-ripe banans
1 1/2 t. vanilla
1/3 c. maple syrup

Mix wet puree with dry ingredients
Add a handful of blueberries (frozen is fine) and grated carrot shreds
Mix by hand
Fill muffin tins
Bake at 450 degrees for around 15 min or until brown on top

They taste great toasted with some homemade jam. Even though they are pretty healthy (for us!) the kids love them 🙂

  1. My kids hate raisins, but I bet if I put a couple chocolate chips in them and made them into mini muffins they would eat them. :o)

  2. My husband doesn’t care for nay of the ‘healthy food’ I make for snacks but he may just eat these because of the name!
