Sneaking in veggies

I have (oops! I mean my kids) never been big fans of veggies. Raw veggies often have a strong taste that I don’t like and cooked veggies have a mushy texture that I despise.

A few years ago I started trying out recipies with grated carrots or grated zucchini thrown in for added nutrition. I loved the idea since I couldn’t taste the veggies but knew I was benefiting from their presence.

To streamline the process, I began using my food processor to grate raw carrots, spinach, and zucchini in bulk, squishing them into ice cube trays, adding some water, then sticking the trays in the freezer. The next day I remove all the carrot cubes and put them in bags and back in the freezer. Then, I am all ready to throw veggies into my recipies at a moments notice!

Cube size grated veggies are great to throw in:
stir frys
hamburger
taco meat
lasagna
spaghetti sauce
pumpkin bread
banana bread
mashed potatoes

  2. I used to freeze my homemade babyfood like this…but I never thought about doing it for grated veggies. Grate (I mean great) idea!

  3. That’s a great tip. I have to force myself (er, I mean my KIDS) to eat veggies, too. Last summer, hubby planted a whole seed packet in EACH of three zucchini holes and so now I use chopped frozen zucchini in almost everything! I especially like it to stretch ground beef in dishes like hamburgers, chili, lasagne, etc.

  5. I’ve been doing this for a few months, kind of based on the Deceptively Delicious cookbook (though I’ve found that not many of the recipes straight from there have been a huge success). I make spaghetti sauce loaded with veggies that the boys don’t detect! You can check the “cooking” category on my blog for what’s worked and hasn’t. Thanks for the tips!

  6. This is a great idea!I`ll have to try this.Have you heard of Jessica Seinfeld`s new cookbook called Deceptivly Delicious?She uses pureed veggies in her frcipes and I heard they`re fantastic.I`ll be back to read moore of your blog again.
